How to make it

  • Soak to rehydrate 1 C. of Rice Veg Mix (equal portions dried celery, dried green bell pepper and dried onion) and 2 cups chunked dehydrated chicken, brown the meat and veg in ¼ C. of olive oil in a large pot. As the meat browns add a seasoning mix of 1 Tablespoon cajun seasoning and sauté the chicken until well browned, remove from pot. Add an additional ¼ C. of olive oil and ½ C. flour and cook until a dark brown roux is achieved. Add the browned Rice Veg Mix and chicken and about 3 quarts of water and 3 envelopes of low sodium chicken bullion slowly while stirring and simmer the pot uncovered until tender. Into the pot add 1 pound of smoked sausage in chunks, 2 TBSP parsley and 2 C. of rice. Adjust seasoning and continue cooking the gumbo until the rice is done. The Gumbo should be quite wet. Serve with fry bread.
