- 10 small-med red potatoes shopping list
- 1 bunch new carrots shopping list
- ½ lb green beans shopping list
- 8 oz cremini or other mushrooms shopping list
- 1 zucchini or eggplant, sliced shopping list
- 2-3 cloves garlic smashed shopping list
- 1 bunch green onion or to taste shopping list
- 1/3 cup wild rice (cook & chill) shopping list
- 1 can red kidney beans (I used organic) (rinsed) shopping list
- 4 or 5 radishes sliced shopping list
- 8-10 cherry tomatoes cut in halves. shopping list
- ½ cup or as desired bocconcini Pearls or Mini (cheese) shopping list
- Fresh dill shopping list
- balsamic vinegar shopping list
- olive oil shopping list
- pepper/ salt shopping list
How to make it
- Bring potatoes to a boil; simmer, in last 5 minutes add carrots & grean beans (cut in uniform angled slices)
- (Be careful not to overcook)
- Saute Mushrooms, sliced zucchini and garlic very briefly.
- Combine all ingredients.
- Chill to let flavors marry.
