Sweet Vegetable Saute

- 3 TB olive oil shopping list
- 2 med. onions,sliced shopping list
- kosher salt and fresh ground black pepper shopping list
- 3 large zucchini,sliced in half lengthwise,then thinly sliced in half circles. shopping list
- 1 tsp herbes de provence(or just basil,oregano and marjoram) shopping list
How to make it
- In large saute pan,heat olive oil over med-high heat. Add the onions,season with salt and cook 2-3 mins,stirring to avoid burning
- Add zucchini,herbes de Provence and salt and pepper.to taste and cook additional 5 mins,usung wooden spoon or spatula to avoid overbrowning. Reduce heat to low,add a little more oil if needed and let cook 20-30 mins,stirring occasionally.
- Once it's done,you can turn off the heat and let it sit stovetop or just let it cook some more over very low heat. The dish is very flexible.
