How to make it

  • Lobster filling:
  • Cut lobster into chunks
  • Place mayo in a pan and heat with milk. Add vinegar and stir constantly
  • Simmer one minutes. Add lobster and let sit over low heat for 2 to 3 minutes
  • Remove from heat and cool. Stir in chervil or tarragon
  • To make biscuits:
  • Sift all dry ingrdients into a bowl
  • Cut in shortening till coarse crumbs
  • Mix in chives
  • Stir in milk and knead with fingers till dough sticks together
  • Gently pat dough onto a lightly floured surface
  • about 1/2 inch thick
  • Cut with 2 1/2 inch cutter
  • Bake 400- 10 to 12 minutes or lightly browned
  • makes 10 biscuits.
  • To serve:
  • Split 4 chive bisacuits in half
  • Top with 1/4 of lobster mixture saving a piece of lobster for garnish
  • Add the top biscuit to partially cover ssalad
  • Garnish with the saved pice of lobster and tarragon sprig
