Lobster Shortcakes -chive Biscuits

                    - lobster filling: shopping list
 - 2 cups cooked lobster meat shopping list
 - 1/2 cup mayonaisse shopping list
 - 1/4 cup milk shopping list
 - 1 tsp vinegar shopping list
 - 2 Tbs fresh chopped chervil or tarrago shopping list
 - Biscuits: shopping list
 - 2 cups flour shopping list
 - 2 tsp baking powder shopping list
 - dash salt shopping list
 - 1/2 tsp cream of tarter shopping list
 - 2 tsp sugar shopping list
 - 1/2 cup shortening shopping list
 - 2 to 3 Tbs fresh snipped chives shopping list
 - 2/3 cup cold milk or more as needed shopping list
 - Garnish: shopping list
 - pieces of lobster shopping list
 - srrigs of chervil or tarragon shopping list
 
How to make it 
                    - Lobster filling:
 - Cut lobster into chunks
 - Place mayo in a pan and heat with milk. Add vinegar and stir constantly
 - Simmer one minutes. Add lobster and let sit over low heat for 2 to 3 minutes
 - Remove from heat and cool. Stir in chervil or tarragon
 - To make biscuits:
 - Sift all dry ingrdients into a bowl
 - Cut in shortening till coarse crumbs
 - Mix in chives
 - Stir in milk and knead with fingers till dough sticks together
 - Gently pat dough onto a lightly floured surface
 - about 1/2 inch thick
 - Cut with 2 1/2 inch cutter
 - Bake 400- 10 to 12 minutes or lightly browned
 - makes 10 biscuits.
 - To serve:
 - Split 4 chive bisacuits in half
 - Top with 1/4 of lobster mixture saving a piece of lobster for garnish
 - Add the top biscuit to partially cover ssalad
 - Garnish with the saved pice of lobster and tarragon sprig
