How to make it

  • Fry chicken in a non-stick frying pan wipe with oil, to seal. Add onion peppers and cook for 5min. Add all the other ingredients. Reduce heat place a lid on the pan and simmer gently for 20min or until chicken is tender. Check once or twice to makesure the liquid has not evaporated.
  • Put into a serving dish, sprinkle over basil, serve with penne pasta or green beans and broccoli.
