Make-it-yourself Cookies

- 1 cup butter,margarine,shortening,or lard(call it fat) shopping list
- 1 cup a type of sugar (e.g. brown sugar) shopping list
- ½ cup another type of sugar (e.g. granulated sugar) shopping list
- 2 eggs (Omega-5,Raw,Pasteurized,Brown,or salted) shopping list
- 1 teaspoon extract(vanilla,almond,coconut,lemon,brandy,maple,etc.) shopping list
- 2½ cups flour(all-purpose,cake,whole wheat, multi-grain,self-rising,etc.) shopping list
- 1 teaspoon baking soda or baker's ammonia(call it leavening agent) shopping list
- 1 teaspoon table,sea,kosher,or coarse salt (OMIT if using salted eggs) shopping list
- 2 tablespoons molasses,honey,other syrups(OMIT if using brown sugar) shopping list
- 2 cups filling (see TIPS) shopping list
How to make it
- Preheat the oven to 375°F. Line a cookie sheet with aluminum foil.
- Cream together the fat,syrup(if using),and sugar(s) until fluffy.
- Beat in eggs and extract until creamy.
- In another bowl,mix together the flour,leavening agent,and salt(if using).
- Gradually add into creamy mixture until dough forms.
- Stir in the filling. Bake for 8-13 mins or until golden. Serve with milk.
Tips
- DO NOT USE LIQUID for filling as this makes mush.
- List of measurements for filling:
- 2 cups = 1 type of filling, 1cup = 2 types, 2/3 cup = 3 types
- ½ cup = 4 types, ¼ cup = 8 types
- If you don't understand,the measurements are the numbers of types.
- What do you choose? Drop the cookies or roll them into balls?
- If using whole wheat or multi-grain flour, add in the bran from the sieve.
- Peanut butter and any other food spreads go into the fat category.
Ideas for Filling
- Try chocolate chips,dark,milk,semi-sweet,or white!
- Maybe some dried or candied fruit make a treat.
- Oatmeal and Shredded Coconut would be healthy.
- Go nutty with almonds,peanuts,walnuts,macadamia,and pecans.
