Sweet - Sour Sirloin

- 4 strips bacon, diced shopping list
- 2 tbsp water shopping list
- 1/2 large carrot, minced shopping list
- 1 medium red onion, diced shopping list
- 1 celery stalk, minced shopping list
- 3 sprigs thyme, de-stemmed shopping list
- 3 1/2 oz cranberries shopping list
- 1/2 cup red wine shopping list
- 1 cup beef stock shopping list
- 1/3 cup maple syrup shopping list
- 1 tsp lemon zest shopping list
- 1 tbsp olive oil shopping list
- 6 (5-oz) sirloin steaks, approx 1" thick shopping list
- salt and pepper shopping list
How to make it
- In a large skillet, cook bacon and water until bacon renders its fat and crisps. Remove with a slotted spoon and set aside.
- To the hot bacon fat, add carrot, onion, celery and thyme. Cook until vegetables begin to soften, then add cranberries, red wine, stock and maple syrup.
- Cook, stirring often, for 7-8 minutes, then stir in the reserved bacon and lemon zest and remove from heat.
- In another skillet, heat olive oil over medium-high.
- Season steaks with salt and pepper and arrange in one layer in the hot skillet (you may need to do two batches).
- Cook for 4 minutes per side, remove to serving plates and top with cranberry sauce. Serve with rice or mashed potatoes and roasted vegetables.
