How to make it

  • In a large skillet, cook bacon and water until bacon renders its fat and crisps. Remove with a slotted spoon and set aside.
  • To the hot bacon fat, add carrot, onion, celery and thyme. Cook until vegetables begin to soften, then add cranberries, red wine, stock and maple syrup.
  • Cook, stirring often, for 7-8 minutes, then stir in the reserved bacon and lemon zest and remove from heat.
  • In another skillet, heat olive oil over medium-high.
  • Season steaks with salt and pepper and arrange in one layer in the hot skillet (you may need to do two batches).
  • Cook for 4 minutes per side, remove to serving plates and top with cranberry sauce. Serve with rice or mashed potatoes and roasted vegetables.
