Spiced Clams

- Ingredients shopping list
- • 1 small onion, finely chopped shopping list
- • 1 celery stick, sliced shopping list
- • 2 cloves of garlic, finely chopped shopping list
- • 1 inch piece fresh root ginger, grated shopping list
- • 2 tablespoon olive oil shopping list
- • 1/4 teaspoon chilli powder shopping list
- • 1 teaspoon turmeric shopping list
- • 2 tablespoon chopped fresh parsley shopping list
- • 1 1/4 lb small clams, in the shell shopping list
- • 2 large tablespoons of dry white wine shopping list
- • salt and ground black pepper shopping list
- • celery leaves, to garnish shopping list
- • Fresh bread, to serve shopping list
How to make it
- Preparation
- Place the onion, celery, garlic and ginger in a large pan, add the olive oil, spices and parsley and stir-fry for about 5 minutes. Add the clams to the pan and cook for 2 minutes.
- Add the wine, then cover and cook gently for 2-3 minutes, shaking the pan occasionally. Season !!. Discard any clams that fail to open, then serve, garnished with the celery leaves/flat leaf parsley
- Cooking tips
- • Before cooking the clams, check that all the shells are closed. Any clams that do not open after cooking should be discarded.
- • Serve with warm crusty bread and a chilled glass of dry white wine!
