Chocolate And Prune Fudge Cake

- 4 ounces (100 grams) butter (low fat spread if you want to make the cake truly healthy!) shopping list
- 2 ounces (50 grams) dark chocolate shopping list
- 2 tablespoons golden syrup shopping list
- 4 ounces (100 grams) caster sugar shopping list
- 2 eggs shopping list
- 1 tsp vanilla essence shopping list
- 4 ounces (100 grams) plain flour shopping list
- 1 teaspoon baking powder shopping list
- 1 tablespoon cocoa powder shopping list
- 2 ounces (50 grams) dried prunes, chopped shopping list
- 2 ounces (50 grams) walnuts, chopped shopping list
How to make it
- 1. Preheat the oven to 180C/350F
- 2. Grease and line a 7 inch/18 cm diameter deep cake tin
- 3. Melt the butter, chocolate and golden syrup together
- 4. Beat the eggs, vanilla essence and sugar together until combined, then slowly stir in the melted butter mixture
- 5. Sift together the flour, baking powder and cocoa powder
- 6. Fold the wet ingredients into dry ingredients, and stir in the prunes and walnuts. If the mixture is too thick (should be like a thick batter), add a tablespoon or two of milk
- 7. Bake in the prepared tin for 30 minutes, or until the cake is well risen and spongy
- I didn't ice my cake as I ate it as a pudding, but I'm sure either a drizzling of a simple icing sugar glaze, or perhaps a more calorific buttercream topping would have worked just fine!
