How to make it

  • 1. Preheat the oven to 180C/350F
  • 2. Grease and line a 7 inch/18 cm diameter deep cake tin
  • 3. Melt the butter, chocolate and golden syrup together
  • 4. Beat the eggs, vanilla essence and sugar together until combined, then slowly stir in the melted butter mixture
  • 5. Sift together the flour, baking powder and cocoa powder
  • 6. Fold the wet ingredients into dry ingredients, and stir in the prunes and walnuts. If the mixture is too thick (should be like a thick batter), add a tablespoon or two of milk
  • 7. Bake in the prepared tin for 30 minutes, or until the cake is well risen and spongy
  • I didn't ice my cake as I ate it as a pudding, but I'm sure either a drizzling of a simple icing sugar glaze, or perhaps a more calorific buttercream topping would have worked just fine!
