How to make it

  • Preheat oven to gas 4, 180˚c , put red onion & pepper in a small roasting dish. Drizzle with olive oil season and cook for 30 mins
  • Mix chicken with pesto sprinkle over stock cube and add garlic and add a splash of water (no need for oil as pesto is oily)
  • Fry chicken in a large pan until cooked through, stir in parmesan
  • Put the halved goats cheese on an ovenproof plate and bake for a few minutes till cheese is soft
  • Drizzle salad with oil and balsamic vinegar
  • Devide between 4 plates, put the cheese in the centre and spoon over chicken and veg.
