Pesto Chicken & Goats Cheese

- 2 large red onions chopped shopping list
- 2 large peppers (red, yellow or orange) cut into chunks shopping list
- 4 skinless, boneless chicken breasts, cut into chunks shopping list
- 6 tbsp green pesto shopping list
- 1 chicken stock cube crushed shopping list
- 2 garlic cloves crushed shopping list
- 2 tbsp grated parmesan shopping list
- 2 whole goats cheeses with rind both halved shopping list
- Mixed salad leaves shopping list
- 2tbsp balsamic vinegar. shopping list
How to make it
- Preheat oven to gas 4, 180˚c , put red onion & pepper in a small roasting dish. Drizzle with olive oil season and cook for 30 mins
- Mix chicken with pesto sprinkle over stock cube and add garlic and add a splash of water (no need for oil as pesto is oily)
- Fry chicken in a large pan until cooked through, stir in parmesan
- Put the halved goats cheese on an ovenproof plate and bake for a few minutes till cheese is soft
- Drizzle salad with oil and balsamic vinegar
- Devide between 4 plates, put the cheese in the centre and spoon over chicken and veg.
