How to make it

  • Scald the cornmeal with the pint of hot water, then mix in the two cups of entire wheat foour, the molasses and the salt, adding the yeast dissolved in 1/4 cup of lukewarm water. Lastly add the soda, also dissolve in 1/4 cup lukewarm water. Pour this batter into greased molds, filling each a little over half, and let them rise until they are nearly full.
  • Then put the molds into a pot of rapidly boiling water. Boil three hours, take them out and bake them for 1/2 hour.

    I am only assuming that it is whole wheat flour -- I currently cook for someone and it has to be gluten-free.

    You are right about the cans for the molds-- I remember my mom using them, too.

    Is entire Whet Flour - whole wheat flour? Also, what kind of molds do you use? I think my grandmother used empty vegetable cans or tins.... I love this and want to make it this fall.
