How to make it

  • Put the flour on the counter top in a mound and make a well in the middle with a large spoon or the bottom of a measuring cup. Add the egg and egg yolks, olive oil, and salt. See Photo
  • With a fork, mix the ingredients in the well together and start to bring flour from the edge into the mixture. See Photo
  • Keep incorporating more flour until a paste starts to form. Using your hands, pull the flour around from the edges and pull it together with the egg mixture (you can add a little bit of water if the paste isn't absorbing all of the flour and cannot be easily worked).
  • Once everything comes together, you can knead the dough by hand or in a stand mixer with a dough hook See Photo. Regardless of what method you use, the dough should be slightly elastic but firm, and the shape shouldn't change when you take your hands away.
  • Wrap in plastic wrap and let rest on the counter for at least an hour to rest. See Photo
