Grilled Fish With Pineapple Rice Salsa

- pineapple rice Salsa: shopping list
- 1 cup cooked rice (room temp.) shopping list
- 3/4 cup fresh pineapple finely chopped shopping list
- 3 green onions chopped shopping list
- 2 1/2 TBSP fresh lime juice shopping list
- 1-2 fresh jalapeno pepper, seed removed and minced shopping list
- ( I use two jal. peppers for the extra heat shopping list
- 11/2 TBSP fresh cilantro shopping list
- Fish: shopping list
- 1TBSP fresh lime juice shopping list
- 2-3-cloves garlic minced shopping list
- 4 5 oz. fish steaks (Snapper, Swordfish,or tuna) shopping list
- 1 1/2 tsp chilli powded shopping list
- 1 tsp fresh cracked pepper shopping list
- lime wedges for garnish shopping list
How to make it
- Pineapple Rice Salsa:
- Mix all ingredients in glass bowl. Set aside
- Fish:
- Spray cold grill with non-stick spray
- Heat Grill to Med. heat
- Combine lime juice and garlic on a plate
- Dip fish in lime mixture -coating each side
- Sprinkle fish with chili powder and pepper
- Place Fish on grill - cover and turn after 2-3 min.
- Flip fish and grill 1-2 min. more or until fish is done
- Plate fish over Pineapple Rice Salsa and garnish
