Grilled Fish With Pineapple Rice Salsa Recipe

Ingredients
  • Pineapple Rice Salsa:
  • 1 cup cooked rice (room temp.)
  • 3/4 cup fresh pineapple finely chopped
  • 3 green onions chopped
  • 2 1/2 TBSP fresh lime juice
  • 1-2 fresh jalapeno pepper, seed removed and minced
  • ( I use two jal. peppers for the extra heat
  • 11/2 TBSP fresh cilantro
  • Fish:
  • 1TBSP fresh lime juice
  • 2-3-cloves garlic minced
  • 4 5 oz. fish steaks (Snapper, Swordfish,or tuna)
  • 1 1/2 tsp chilli powded
  • 1 tsp fresh cracked pepper
  • Lime Wedges for garnish

Directions
  1. Pineapple Rice Salsa:
  2. Mix all ingredients in glass bowl. Set aside
  3. Fish:
  4. Spray cold grill with non-stick spray
  5. Heat Grill to Med. heat
  6. Combine lime juice and garlic on a plate
  7. Dip fish in lime mixture -coating each side
  8. Sprinkle fish with chili powder and pepper
  9. Place Fish on grill - cover and turn after 2-3 min.
  10. Flip fish and grill 1-2 min. more or until fish is done
  11. Plate fish over Pineapple Rice Salsa and garnish
