Salsa Di Pomodori ( Tomato Sauce )

- 2 tbsp extra virgin olive oil shopping list
- 1/2 cup finely chopped onions shopping list
- 1 clove minced garlic shopping list
- 2 cups Italian plum or whole pack tomatoes, coursley chopped, but not drained shopping list
- 3 tbsp tomato paste shopping list
- 1 tbsp finely cut basil (I use more), or 1 tsp dried basil shopping list
- 1 teas sugar shopping list
- 1/2 teas salt shopping list
- Freshly ground pepper shopping list
- NOTE" If you like oregano, add some! shopping list
How to make it
- Using a 2-3 qt saucepan, heat the olive oil until a light haze forms over it. Add the onions and cook over moderate heat 7-8 minutes until they are soft, not browned.. Add garlic, cook for a minute. Add the tomatoes, tomato paste, basil, sugar, salt (and oregano if using) and a few grindings of pepper. Reduce the heat to very low and simmer, with the pan partially covered, for about 40 minutes. Stir occasionally.
- Press the sauce through a fine sieve (or food mill) into a bowl or pan. Taste for seasoning.
