How to make it

  • Using a 2-3 qt saucepan, heat the olive oil until a light haze forms over it. Add the onions and cook over moderate heat 7-8 minutes until they are soft, not browned.. Add garlic, cook for a minute. Add the tomatoes, tomato paste, basil, sugar, salt (and oregano if using) and a few grindings of pepper. Reduce the heat to very low and simmer, with the pan partially covered, for about 40 minutes. Stir occasionally.
  • Press the sauce through a fine sieve (or food mill) into a bowl or pan. Taste for seasoning.

    yep, that will make a nice sauce. similar to my Italian father-in-laws recipe that we make every week. its amazing how a few fresh ingredients prepared correctly can transform into something truelly special. thanks for the post!
