How to make it

  • Preheat oven to 375 degrees F. Grease a 9"x13"x2" pan with butter.
  • Cut rhubarb in 1-2" pieces, enough to cover the bottom of the pan in a layer at least 1 piece thick. Sprinkle with 1 1/2 c. of the sugar. Set aside.
  • In mixing bowl, beat eggs until foamy. Add remaining 1 1/2 c. sugar and beat until thick. Add vanilla, flour and baking powder. Mix well. Add hot water and mix well. Pour batter over rhubarb.
  • Put in preheated oven and back at 375 degrees F. for 45 minutes.
  • Serve with whipped cream or ice cream.
