Rhubarb Sponge Dessert

- rhubarb and sugar shopping list
- butter to grease pan shopping list
- 4 eggs, beaten shopping list
- 3 c. sugar, divided shopping list
- 2 c. flour shopping list
- 1 tsp. baking powder shopping list
- 1/2 tsp. salt shopping list
- 1 tsp vanilla shopping list
- 1/2 c. hot water shopping list
How to make it
- Preheat oven to 375 degrees F. Grease a 9"x13"x2" pan with butter.
- Cut rhubarb in 1-2" pieces, enough to cover the bottom of the pan in a layer at least 1 piece thick. Sprinkle with 1 1/2 c. of the sugar. Set aside.
- In mixing bowl, beat eggs until foamy. Add remaining 1 1/2 c. sugar and beat until thick. Add vanilla, flour and baking powder. Mix well. Add hot water and mix well. Pour batter over rhubarb.
- Put in preheated oven and back at 375 degrees F. for 45 minutes.
- Serve with whipped cream or ice cream.
