- 2 lbs pork, cut off all fat, cut into 1/4" cubes shopping list
- 2 lbs beef, cut off all fat, cut into 1/4" cubes shopping list
- 1 lg onion, chopped shopping list
- 2 or more cloves garlic, chopped shopping list
- 4 cans (more if needed) beef broth -- enough to cover meat shopping list
- 2 tubs frozen red chili -- 1 hot, 1 med or 2 med, if you prefer shopping list
- Mexican hominy shopping list
- garlic salt, oregano or cilantro (to taste) shopping list
How to make it
- Brown meat in olive oil, add onion and garlic and cook until brown. Cover with water and cook in pressure cooker for 20 minutes or until meat is tender. Then add beef broth to cover meat. Add red chili and cook together another 20 minutes. Season to taste and thicken with flour (or your preferred thickener -- our household is gluten-free so we use arrowroot or rice flour). Add hominy at the end of cooking just before serving.
- Garnish with tortilla chips, lime wedges and cheese. Some even garnish with diced radishes.
