Spicy Chicken Tinola

- 3 chicken quarters (cut into drumstick and thigh parts) shopping list
- 5-6 cups of water shopping list
- 6 slices of ginger shopping list
- 5 cloves of garlic, minced shopping list
- 5-7 green chili (siling haba) shopping list
- 1 medium sized onion, chopped shopping list
- 1/8 cup of fish sauce (patis) shopping list
- 2 tbsp vegetable oil (or any available cooking oil) shopping list
- 1 small unripe papaya (green papaya) cut into wedges shopping list
- (optional) half cup of malunggay or moringa leaves shopping list
- (optional) 1 pc. knorr chicken cubes (or bouillon) shopping list
How to make it
- In a deep pan, saute onions, garlic and ginger for about half a minute
- add in fish sauce or patis
- stir again for about 25 seconds to mix the flavor of the fish sauce with the rest of the ingredients
- add 2 pieces of green chili or siling haba
- add in chicken parts, mix the ingredients so that the fish sauce, garlic and ginger will evenly coat the chicken pieces
- add about 2 cups of water
- cover the pan for about 3 minutes to let the chicken release its natural oil
- after 2 minutes, turn the chicken so that the other side will be submerged in water
- add in the rest of the chili (green sili)
- let it simmer for 2 minutes
- add another 2 cups of water and repeat the previous procedure
- after 4 minutes, mix again and add in the rest of the water
- give it the old taste test. if the soup is bland, add an additional 2 tbsp fish sauce or drop in 1 piece of knorr chikcen cube
- once dissolved, stir the broth so the knorr cube will be evenly distributed to the broth
- let the broth boil for about 10-12 more minutes in low heat
- add in papaya and moringa (malunggay) leaves
- after 3 minutes, turn off the heat and let the tinola sit for about 4 minutes before serving.
- serve with steamed rice
