Rum-marinated Pineapple With 2 Sugars Recipe
Choose a pineapple that's ripe, but still tangy. The 2 sugars can be served as condiments with a selection of crisp & acidic fruit - green apples, starfruit, guava, green mango, pomelo segments etc.

Ingredients
  • 1 whole fresh pineapple
  • 3 tbsp rum
  • 4 tbsp dark brown sugar
  • 1 1/2 tsp finely chopped red chilli
  • 1/8 tsp salt
  • 5 tbsp coarse white sugar
  • 16 fresh mint leaves

Directions
  1. Slice skin off pineapple with a sharp knife. Cut out 'eyes'. Cut pineapple in halp lengthwise & slice halves across into semicircles. Combine pineapple slices & rum in a bowl. Cover in refrigerate for 2hrs. Stir occasionally.
  2. Mix brown sugar with chilli & salt. it may melt slightly - this is fine. Chill 30mins, uncovered.
  3. Just before serving, chop mint leaves finely & stir into white sugar. (Alternatively, whizz mint leaves & sugar together in a mini chopper.) Serve pineapple with sugars on the side.
