- 3 New York Strip steaks...about 10 ounces each shopping list
- 3 Tablespoons oil shopping list
- 1 Ancho Chile...stemmed and seeded shopping list
- 1 Cup brown sugar shopping list
- 1/2 Cup sea salt shopping list
- ~ Not Your Ordinary Grouper ~ shopping list
- First of all your goin' to want to make this: shopping list
- 1/2 Cup olive oil shopping list
- 1/2 Cup green onion...chopped,with some of it's top shopping list
- 1/2 Cup spicy brown mustard...I make my own home-made mustard,it is a Hot Swedish-Style(will place it ) shopping list
- 1/4 Cup white wine vinegar shopping list
- 2 cloves garlic,minced shopping list
- 3 teaspoon paprika shopping list
- 3 Tablespoon orange juice...freshly squeezed shopping list
- 3 Dashes of hot sauce shopping list
- 1 teaspoons sea salt shopping list
- Zest of that squeezed orange shopping list
- Combine all the ingredients,except the zest,in a blender,process until smooth. shopping list
- Chill it for about 30 mintues,covered until ready to serve. shopping list
- Present this in a bowl,garnished with the zest...with your grouper. shopping list

- 2 teaspoons thyme shopping list
- 2 teaspoons cayenne shopping list
- 2 teaspoons paprika shopping list
- 2 teaspoons sea salt shopping list
- 1 teaspoon garlic powder shopping list
- 2 teaspoons white pepper shopping list
- 1/2 Cup Fresh Country butter,unsalted...have at room temperature shopping list
- 3 Pounds Grouper...Fresh shopping list
How to make it
- ~ For Doin' the Strip ~
- Wipe the steaks dry.
- Rub with the oil.
- Place the Chile in processor and pulse until fine.
- Combine the chile with the sugar,and salt.
- With your hands coat the strip.
- Over hot coals,grill the strips until of your liking...anywhere between 10 to 15 minutes should do,for medium rare...I like the blood a runnin' on my strips'...so,I cook at a hotter heat and less time...but suit your self,on the degree of doneness of your strips.
- Turn once during cooking.
- ~ For Your Not Ordinary Grouper ~
- Combine the thyme,cayenne,paprika,salt,garlic powder,and white pepper,mix and set aside.
- Wipe the grouper fillets clean.
- Butter up both sides.
- Rub down both sides and pat in gently.
- In a hot,smoking cast iron...add the remaining butter.
- Decrease the heat and add the grouper.
- Cook until nicely browned,about 3 minutes,on one side, and a couple of minutes on the other.
- Serve hot with the sauce,and your strip steak.
- ~ A nice green salad,home-made hot bread,choice of green vegetable,a nice good cold beer,Chocolate Raisin Cake with Rum Frosting...and a couple shots of good Bourbon later, to wash it all down.~
