How to make it

  • ~ For Doin' the Strip ~
  • Wipe the steaks dry.
  • Rub with the oil.
  • Place the Chile in processor and pulse until fine.
  • Combine the chile with the sugar,and salt.
  • With your hands coat the strip.
  • Over hot coals,grill the strips until of your liking...anywhere between 10 to 15 minutes should do,for medium rare...I like the blood a runnin' on my strips'...so,I cook at a hotter heat and less time...but suit your self,on the degree of doneness of your strips.
  • Turn once during cooking.
  • ~ For Your Not Ordinary Grouper ~
  • Combine the thyme,cayenne,paprika,salt,garlic powder,and white pepper,mix and set aside.
  • Wipe the grouper fillets clean.
  • Butter up both sides.
  • Rub down both sides and pat in gently.
  • In a hot,smoking cast iron...add the remaining butter.
  • Decrease the heat and add the grouper.
  • Cook until nicely browned,about 3 minutes,on one side, and a couple of minutes on the other.
  • Serve hot with the sauce,and your strip steak.
  • ~ A nice green salad,home-made hot bread,choice of green vegetable,a nice good cold beer,Chocolate Raisin Cake with Rum Frosting...and a couple shots of good Bourbon later, to wash it all down.~
