Chocolate Avocado Banana Bread

- 2 cups whole wheat or unbleached flour shopping list
- 1/4 cup cocoa powder shopping list
- 1 tsp baking powder shopping list
- 1 tsp baking soda shopping list
- 1 1/2 cups vegan sugar shopping list
- 1/4 teaspoon cinnamon shopping list
- 1 tsp salt shopping list
- 3 non-eggs (I use flax or chia seeds) shopping list
- 1 ripe avocado, mashed shopping list
- 2 ripe bananas, mashed shopping list
- 1 tsp lemon juice shopping list
- 3 tsp vanilla shopping list
- 1 cup chopped walnuts or other nuts (optional) shopping list
- 1 cup vegan chocolate chips (optional) shopping list
How to make it
- Preheat oven to 350 degrees.
- Beat together "eggs", vanilla, lemon juice and sugar. Add avocado and banana and blend until smooth.
- Add all other dry ingredients slowly. It will be very thick so add about 1/2 cup water if you need to thin it out.
- Stir in the nuts or chocolate chips if you choose to include them. Pour the whole mixture into a lightly greased pan. Bake for 50-60 minutes at 350 degrees. Mine didn't rise very much, but it is a "dessert" bread and is more dense than airy. ***I've made muffins with this recipe, and they will turn out lighter than the bread***
- It's finished when a wooden toothpick comes out clean. Let it cool before slicing.
