How to make it

  • Preheat oven to 350 degrees.
  • Beat together "eggs", vanilla, lemon juice and sugar. Add avocado and banana and blend until smooth.
  • Add all other dry ingredients slowly. It will be very thick so add about 1/2 cup water if you need to thin it out.
  • Stir in the nuts or chocolate chips if you choose to include them. Pour the whole mixture into a lightly greased pan. Bake for 50-60 minutes at 350 degrees. Mine didn't rise very much, but it is a "dessert" bread and is more dense than airy. ***I've made muffins with this recipe, and they will turn out lighter than the bread***
  • It's finished when a wooden toothpick comes out clean. Let it cool before slicing.
