Carrot Meatballs

- 1 lb ground beef shopping list
- ½ cup shredded cheese (I used a combination of colby, Monterey shopping list
- Jack & Cheddar) shopping list
- 1 cup finely grated carrots shopping list
- 5-6 tablespoons breadcrumbs shopping list
How to make it
- Combine all ingredients in a large bowl and mix together (with your hands of course!).
- Form into even-sized balls.
- Cook in a skillet on medium to medium-high heat or in a 350 oven on a sheet tray.
- The cooking time will vary based on the size of meatballs you form (and your true oven temp. if you cook them in the oven). For a yield of 18 meatballs, my stovetop cooking time was about 9 minutes on medium-high.
