Jicama Red Cabbage Green Apple Slaw

- 3 medium limes shopping list
- 2 Tbs. honey shopping list
- ¼ cup mayonnaise shopping list
- 1/2 small head red cabbage shopping list
- 1 medium jicama root shopping list
- 3 green apples, thinly julienned shopping list
- 5 green onions, chopped shopping list
- 1/2 cup packed chopped fresh cilantro leaves, plus extra leaves for garnish shopping list
- salt and pepper shopping list
How to make it
- 1. Grate zest from 1 lime, and set aside. Squeeze lime juice into medium bowl. Rapidly whisk in honey until well blended. Slowly whisk in mayonnaise. Set aside.
- 2. Cut cabbage in half lengthwise. Remove and discard core. Cut cabbage crosswise into very thin slices.
- 3. Combine cabbage, jicama, apples, green onions, and cilantro. Toss to mix.
- 4. Add dressing, and stir gently until vegetables and apples are lightly coated.
- 5. Season to taste with sea salt and pepper. Let stand at room temperature 30 minutes to allow flavors to blend.
- 6. Sprinkle slaw with lime zest and cilantro. Serve chilled or at room temperature.
