Easy, Rich Egg Pudding

- For the Caramel: shopping list
- 3/4 cups sugar (use less if you want less caramel) shopping list
- A stainless steel saucepan (don't use nonstick) shopping list
- For the Pudding: shopping list
- 6 eggs shopping list
- 1 cup milk shopping list
- 1/2 cup sugar shopping list
- 1 can (14 oz.) condensed milk shopping list
- 1 can (12 oz.) evaporated milk shopping list
- 1 tsp. vanilla extract shopping list
- a pinch of salt shopping list
How to make it
- 1. In the saucepan, melt sugar on low-med heat, or until it turns golden brown and caramelizes. Don't brown too much.
- 2. Immediately pour into baking dish before it hardens.
- 3. In a separate bowl, beat eggs on medium speed. Add the remaining ingredients one by one and continue to beat until mixed well.
- 4. Pour pudding batter through a strainer (to prevent bubbles from forming) into your caramel-ready baking dish. Cover dish with aluminum foil.
- 5. Take a slightly larger pan, and fill it with water halfway. Put your caramel-egg dish inside that larger pan. Place in oven.
- 6. Bake in a preheated oven at 350 degrees for about 35 to 40 minutes, or until knife inserted comes out clean.
- 7. Once it's baked, invert onto a plate, making sure the caramel juice doesn't spill everywhere. Serve cold. Enjoy!
