Plaza Chicken Hash

This was said to be served at Truman Capot'e's Black and White Ball, but I have also heard he made his own Chicken Hash (see recipe I posted). As you can see, they are 2 completely different recipes. Both sound good though!
Ingredients
- 4 cups finely diced cooked chicken (white meat only) shopping list
- 11/2 cups heavy cream shopping list
- 1 cup cream sauce shopping list
- 2 tsp salt shopping list
- 1/8 tsp white pepper shopping list
- 1/4 cup dry sherry shopping list
- 1/2 cup Hollandaise sauce shopping list
How to make it
- Mix chicken, cream, cream sauce and seasonings in a heavy skillet. Cook over moderate heat, stirring often for 10 minutes until reduced. Place skillet in a 350 degree oven and bake for 30 minutes. Stir in sherry and return to oven for 10 minutes. Serve @ once.
