How to make it

  • Place beans in saucepan.
  • Add coffee and water...bring to a roarin' boil.
  • Stay at this boil stage for about 2 minutes,then remove from heat.
  • Cover,and set a side for a spell...about 1 hour will do.
  • Return beans to a nice boil once again.
  • Reduce heat and let it simmer,covered...about 1 hour will do.
  • Skim off any foam.
  • Stir in bacon,brown sugar,Hunts Catsup and mustard.
  • All the while you have had your oven preheated at 275 degrees.
  • Transfer beans to an oven-proof casserole,with lid.
  • Cover and bake...I would guess about 2 to 3 hours will do.
  • Stir,from time to time.
  • Add more coffee if dry.
  • Season to taste with salt,pepper,and Hickory Seasoning.
  • ~ Served with a slice of cornbread,buttered up,potatoes fried crisp,would be mighty nice ~
