L.I. Stuffed Flounder

- ingredients: shopping list
- 1/4 c. chopped onion shopping list
- 3 cloves garlic, minced shopping list
- 1/4 c. butter shopping list
- 1 small can mushrooms, save liquid shopping list
- 6 oz. pkg. frozen crab meat shopping list
- 1/2 c saltines (course) shopping list
- 1/2 tsp. salt shopping list
- Approx. 2- lb flounder shopping list
- 3 T. butter shopping list
- 3 T. flour shopping list
- 1/4 tsp. salt shopping list
- milk shopping list
- 1/3 c. white wine shopping list
- lemon shopping list
- paprika shopping list
How to make it
- Preparation:
- Preheat oven to 400 degrees
- Cook onion in 1/4 cup butter until tender, add garlic and cook until you can smell the garlic, for about a minute. Stir in Mushrooms, crab meat, crackers and parsley. Spread over fish and roll with seam side down.
- Sauce:
- Melt 3 T. butter. Add flour. Add enough milk to mushroom liquid to make 1 1/2 cups. Add wine to saucepan and stir until thick and bubbly. Pour over fish. Bake 25 minutes. Remove and sprinkle paprika and squeeze the juice of one lemon on fish. Place in oven for 10 minutes.
