How to make it

  • Preparation:
  • In a skillet, melt butter and add chopped onions, parsley, Old Bay and flour. Whisk continuously. Add celery salt, pepper, Worstershire, chicken stock, soup and milk, then turn to medium high heat until mixture comes to a boil, then reduce heat to a simmer. Do not allow to scorch.
  • Add chicken. Add pimientos, frozen mixed vegetables).
  • Cook over low heat until vegetables are tender. If mixture seems too thick, add more milk or stock.
  • Note: Leftover chicken or a Rotisserie chicken is great for this recipe!
  • Serve over toast, pop-overs or rice.

    I like it over whole-wheat toast or brown rice. You can use noodles, I'm sure it would be really good. I really enjoy this dish so much, but I have to limit myself to two slices of bread.
