How to make it

  • lightly butter the inside of four 6-ounce ramekins
  • sprinkle gelatin over 1/4 cups of the milk; let stand 3-4 minutes until soft
  • heat the remaining milk, cream, sugar, and vanilla bean (or extract) over medium heat, stirring occasionally, until simmering, about 5 minutes, remove from heat
  • combine the softened gelatin with the hot milk mixture; stir to completely dissolve, 1 minute
  • strain through a fine strainer; save the vanilla bean
  • fill the ramekins, cover with plastic wrap and chill until set
  • to unmold: fill a shallow pan with 1/2 inch of very hot water, one at a time, place the ramekins in the hot water for 15 seconds; remove from water and dry the outside of the ramekins, loosen panna cotta with a knife if needed
  • invert onto a dessert plate
  • scatter berries and spearmint around the panna cotta and serve
