Panna Cotta With Fresh Berries

- 1 tbsp butter shopping list
- 3/4 tbsp unflavored gelatin shopping list
- 1/2 cup milk shopping list
- 1/2 cup heavy cream shopping list
- 1/4 cup sugar shopping list
- 1/2 vanilla bean split OR 2 tsp vanilla extract shopping list
- 1 cup assorted berries shopping list
- 2 tbsp spearmint, chiffonade (cut into thin ribbons) shopping list
How to make it
- lightly butter the inside of four 6-ounce ramekins
- sprinkle gelatin over 1/4 cups of the milk; let stand 3-4 minutes until soft
- heat the remaining milk, cream, sugar, and vanilla bean (or extract) over medium heat, stirring occasionally, until simmering, about 5 minutes, remove from heat
- combine the softened gelatin with the hot milk mixture; stir to completely dissolve, 1 minute
- strain through a fine strainer; save the vanilla bean
- fill the ramekins, cover with plastic wrap and chill until set
- to unmold: fill a shallow pan with 1/2 inch of very hot water, one at a time, place the ramekins in the hot water for 15 seconds; remove from water and dry the outside of the ramekins, loosen panna cotta with a knife if needed
- invert onto a dessert plate
- scatter berries and spearmint around the panna cotta and serve
