How to make it

  • Remove husks from tomatillos, quarter onions and remove skins, place in dry cast iron skillet under high heat. Add garlic cloves and chile pepper (s). I prefer one habanero and one jalapeno. To make this recipe mild, do not add any peppers.
  • With skillet on high heat, blacken all ingredients well.
  • Add enough water to cover tomatillos, and simmer for about 30 minutes.
  • Let cool slightly and transfer to blender. Add cilantro. Blend well.
  • Salt to taste.
