"Fire Roasted" Tomatillo Salsa

- 1 to 1.5 lbs of fresh tomatillos shopping list
- 3-5 cloves of garlic shopping list
- 1 onion, quartered shopping list
- fresh chile pepper(s) optional. shopping list
- salt to taste shopping list
- 1/2 bunch of cilantro shopping list
- 8 or 9 inch cast iron skillet!! shopping list
How to make it
- Remove husks from tomatillos, quarter onions and remove skins, place in dry cast iron skillet under high heat. Add garlic cloves and chile pepper (s). I prefer one habanero and one jalapeno. To make this recipe mild, do not add any peppers.
- With skillet on high heat, blacken all ingredients well.
- Add enough water to cover tomatillos, and simmer for about 30 minutes.
- Let cool slightly and transfer to blender. Add cilantro. Blend well.
- Salt to taste.
