Fruited Beef Stew

- 1-1/2 pounds boneless beef chuck, cut in 1 inch cubes shopping list
- 2 tablespoons oil shopping list
- 3 medium sweet potatoes, peeled and quartered shopping list
- 1 can (16 ounces) tomatoes, cut up shopping list
- 1 cup chopped onion shopping list
- 1/2 cup chopped green pepper shopping list
- 1/2 cup water shopping list
- 2 inches stick cinnamon or 1/4 teaspoon ground cinnamon shopping list
- 1 clove garlic, minced shopping list
- 1 teaspoon salt shopping list
- 1/8 teaspoon pepper shopping list
- 2 ears corn, cut crosswise in 2 inch pieces shopping list
- 2 medium zucchini, sliced shopping list
- 1 can (16 ounces) peach slices, drained shopping list
How to make it
- In a Dutch oven brown meat, 1/3 at a time, in hot oil and drain. Return all meat in pan. Add sweet potatoes, undrained tomatoes, onion, green pepper, water, cinnamon, garlic, salt, and pepper. Bake, covered, in 350 degree oven for 1-1/4 hours. Stir in corn and zucchini; bake 45 minutes longer. Add drained peaches to stew; season to taste with salt and pepper.
