Leftover Thanksgiving Ham And Vegie Casserole

- 1 small package of ziti (slightly undercooked) shopping list
- 1 cup of leftover ham cut into large cubes shopping list
- 1 cup of leftover broccoli shopping list
- 1 cup of leftover cauliflower shopping list
- 1 cup of frozen corn shopping list
- 1 small onion finely chopped shopping list
- 1 small red pepper finely chopped shopping list
- 1 package of mushrooms sliced shopping list
- 2 cups of leftover cheese sauce shopping list
- 1 jar of alfredo sauce shopping list
- 4 chipoltle peppers finely chopped shopping list
- 10 sundried tomatoes finely chopped shopping list
- 10 to 15 pieces of leftover cheese roughly chopped shopping list
- (i used a variety from the cheese platter the day before) shopping list
- fresh cracked black pepper shopping list
- 1/4 cup of dried chives shopping list
- 10 to 15 large whole grain crackers crushed (more leftovers) shopping list
- 1/4 cup of parmesean shopping list
- canola cooking spray shopping list
How to make it
- heaqt oven to 325 degrees
- cook pasta ...remove when slightly undercooked, rinse with cold water and set aside.
- saute onion, red pepper and sliced mushrooms for about 5 to 7 minutes
- in large bowl combine cheese sauce, alfredo, sundried tomatoes,chipoltle peppers,ham, brocolli, cauliflower, onion, mushrooms and pepper mixture, as well as the roughly chopped cheese.
- add zittiadd black pepper to preferance, chives and mix well.
- pour into a greased 9x12 baking dish
- combine crushed crackers and parmesean.
- sprinkle over casserole
- spray butter flavoured cooking spray over crumb mixture
- bake uncovered for 35 to 45 minutes or untill bubbly and brown.
- I served this tonight with a mixed green salad, and whole grain garlic bread......thank god.....was a hit!
