Rhubarb Pie

- 4. cups of freash 1" slices of rhubarb shopping list
- 1- 2/3 cups sugar shopping list
- 1/3 cup flour shopping list
- dash of salt shopping list
- 1 recipe pastry for a 9" double crust pie shopping list
- 2 T. butter shopping list
- 1 egg white,beaten shopping list
- 2 T. sugar shopping list
How to make it
- In a large bowl, mix sugar and flour with a dash of salt.
- Add the chopped rhubarb. Toss with the sugar and flour mixture let stand for 30 minutes.
- Pour filling into pie crust.
- Dot top with butter, and cover with top crust. seal edges of top and bottom crust,cut three 1" slits in top of crust to vent.
- Apply beaten egg white to the top of pie crust , using a pastry brush.
- Sprinkle with sugar.
- Bake at 375 degrees 35-40 minutes, or until bubbly and brown.
- cool on rack.
