How to make it

  • In a large bowl, mix sugar and flour with a dash of salt.
  • Add the chopped rhubarb. Toss with the sugar and flour mixture let stand for 30 minutes.
  • Pour filling into pie crust.
  • Dot top with butter, and cover with top crust. seal edges of top and bottom crust,cut three 1" slits in top of crust to vent.
  • Apply beaten egg white to the top of pie crust , using a pastry brush.
  • Sprinkle with sugar.
  • Bake at 375 degrees 35-40 minutes, or until bubbly and brown.
  • cool on rack.
