Mashed Potato Fudge

- Ingredients: shopping list
- 1/2 cup unseasoned, well-mashed cooked potatoes (about 1 medium potato) shopping list
- 3 cups powdered (confectioners) sugar shopping list
- 1 cup flaked or shredded coconut shopping list
- 1 teaspoon pure vanilla extract shopping list
- 3 ounces semi-sweet chocolate shopping list
- 3 tablespoons butter shopping list
- While the mashed potatoes are still hot, beat in the powdered sugar and coconut; then add the vanilla extract. shopping list
- Press into a lightly greased 8-inch square pan. shopping list
- In a saucepan over low heat, melt chocolate and butter, stirring occasionally. When melted, pour over top of the potato mixture. Refrigerate until set and then cut into squares. shopping list
- Store in an airtight container in the refrigerator. shopping list
How to make it
- Preparation:

- You can use your imagination and make changes like using Marshmallow Fluff, White Chocolate and Peppermint Extract, during Christmas, or shape into logs and roll into Peanut Butter or Caramel and then into Ground Nuts, or Bacon Bits.
