NZ Lamb Shanks

- 4 lamb shanks shopping list
- 1 clove garlic, crushed shopping list
- 450g can tomatoes shopping list
- 1 onion chopped shopping list
- 2 carrots, peeled and sliced shopping list
- fresh rosemary shopping list
- About 1 cup water shopping list
- 1/2 cup white or red wine shopping list
- 8 mushrooms shopping list
- 8 - 12 Black pitted olives shopping list
- salt and feshly ground black pepper to taste shopping list
How to make it
- Preheat oven 170-180 degrees celcius.
- Combine all ingredients except mushrooms and olives in large casserole dish.
- Bake for about 1 1/2 - 2 hours. Stir. Add mushrooms sliced or whole and olives. Put back in oven and continue to cook 1/2 - 1 hour longer until the meat is meltingly tender.
- Lovely served with mashed potato and fresh steamed vegetables.
