Oriental-style Citrus Mackerel

- 2-4 fillets of fresh mackerel, depending on size shopping list
- 1 orange, juiced shopping list
- 2 teaspoon soy sauce shopping list
- Half a chilli, finely chopped shopping list
- 1 teaspoon sesame seeds shopping list
- ½ lime, juiced shopping list
- 2 tablespoons fresh coriander leaves, chopped shopping list
- ½ orange, cut into wedges, to serve shopping list
How to make it
- 1. Place the orange juice, soy sauce, chilli and sesame seeds into a frying pan and simmer for 3-4 minutes.
- 2. Add the mackerel and cook for two minutes on each side, or until cooked through. Remove from the heat, squeeze in the lime juice and scatter with coriander.
- OR for crispy skin, cook the mackerel seperately in a little oil, skin side down first, then pour over other ingredients.
- 3. Serve with a side salad. Garnish with orange wedges.
