How to make it

  • 1. Place the orange juice, soy sauce, chilli and sesame seeds into a frying pan and simmer for 3-4 minutes.
  • 2. Add the mackerel and cook for two minutes on each side, or until cooked through. Remove from the heat, squeeze in the lime juice and scatter with coriander.
  • OR for crispy skin, cook the mackerel seperately in a little oil, skin side down first, then pour over other ingredients.
  • 3. Serve with a side salad. Garnish with orange wedges.
