How to make it

  • Process crackers in a food processor until finely crushed, then add butter and process until just combined
  • Brush a 22cm round springform pan with extra melted butter, line base with baking paper and dust with flour,shaking out excess
  • Press cracker mixture over base of pan and refrigerate for 30min.
  • Process ricotta in a food processor until smooth, add chestnut puree, sugar, orange rind, and yolks amd process until well combined
  • Transfer ricotta mix into a large bowl, add cream and stir to combine.
  • Using an electic mixerwhisk egg whites until soft peaks form and then gently fold eggwhites into ricotta mixture.
  • Spoon mixture into prepared panand bake at 180 deg C for 50 - 60 minutes or until golden in colour and just firm to touch.
  • Turn oven off and cool cake in the oven for 20 minutes with the door ajar, then remove from oven and cool.
  • Serve cheescake with whipped cream and Marrons glaces, if using.
