Chestnut And Ricotta Cheesecake

- 125g Plain sweet crackers shopping list
- 60g butter, melted, plus extra, for greasing shopping list
- 2 tablespoons plain flour shopping list
- 450g fresh ricotta shopping list
- 1/2 cup chestnut puree shopping list
- 110g caster sugar shopping list
- Finely grated rind of 1 orange shopping list
- 4 eggs, seperated shopping list
- 1/2 cup pouring cream shopping list
- whipped cream and marrons glaces, optional, to serve shopping list
How to make it
- Process crackers in a food processor until finely crushed, then add butter and process until just combined
- Brush a 22cm round springform pan with extra melted butter, line base with baking paper and dust with flour,shaking out excess
- Press cracker mixture over base of pan and refrigerate for 30min.
- Process ricotta in a food processor until smooth, add chestnut puree, sugar, orange rind, and yolks amd process until well combined
- Transfer ricotta mix into a large bowl, add cream and stir to combine.
- Using an electic mixerwhisk egg whites until soft peaks form and then gently fold eggwhites into ricotta mixture.
- Spoon mixture into prepared panand bake at 180 deg C for 50 - 60 minutes or until golden in colour and just firm to touch.
- Turn oven off and cool cake in the oven for 20 minutes with the door ajar, then remove from oven and cool.
- Serve cheescake with whipped cream and Marrons glaces, if using.
