Simple Grilled Chicken

- 2 large chicken breasts (actually, any chicken cut will do. I just like the breast because it's the meatiest) shopping list
- 1/2 lemon shopping list
- 2 tsp minced fresh parsley shopping list
- 1 tbsp honey shopping list
- 1 tbsp olive oil shopping list
- salt and pepper shopping list
Optional Ingredients
- 1 clove garlic, minced shopping list
- 1 teaspoon of minced chili (whatever kind you like, depends on your heat tolerance shopping list
How to make it
Preparing the Chicken
- Season the chicken breasts with the salt and pepper and let it sit.
- While letting the chicken sit, mix together all the other ingredients in a separate container.
- Once thoroughly mixed, pour the marinade over the chicken. To make sure the chicken in well covered, put it in a container that's just about the same size as the chicken parts.
- Cover and put in the ref for about 15 minutes. Overnight is better.
Cooking the Chicken
- Put the chicken and marinade in a microwave cooking safe dish and cook in the microwave oven for about 10 - 20 minutes in medium setting.
- Check if the chicken is done. If not yet, microwave it for another 5 minutes or until it's done.
- Preheat the grill pan about 5 minutes before the chicken leaves the Microwave.
- After the microwave cooking, put the chicken (leave the 'gravy' in the dish) on to the grill pan and cook it until it attains that grilled texture on the surface.
Suggestions
- The 'gravy' left from the microwave cooking can be used as gravy for the chicken.
- This really goes well with my mashed potatoes.
