Cinnamon Apple Cake

This cake has lots of moisture because of the cream cheese. It is so tender,use serrated knife for cutting.
Ingredients
- 1-3/4 c sugar shopping list
- 3/4 c block style fat-free cream cheese,softened(I use light) shopping list
- 1/2 c butter or stick margarine,softened shopping list
- 1 tsp vanilla shopping list
- 2 large eggs shopping list
- 1-1/2 c flour shopping list
- 1-1/2 tsp baking powder shopping list
- 1/4 tsp salt shopping list
- 2 tsp ground cinnamon shopping list
- 3 c chopped ,peeled Rome apples or whatever you prefer for baking(about 2 large) shopping list

How to make it
- Preheat ocen tp 350'
- Beat 1-1/2 c sugar,cream cheese,butter, and vanilla at med. speed of a mixer until well blended(about 4 mins). Add eggs,1 at a time,beating well after each addition;set aside
- Lightly spoon flour into dry measuring cups;level with knife. Combine flour,baking powder and salt. Add flour mixture to creamed mixture,beat on low till blended.
- Combine 1/4 c sugar and cinnamon. Combine 2 TB of cinnamon mixture and apple in a bowl;stir apple mixture into batter.
- Pour batter into an 8" springform pan coated with cooking spray,and sprinkle with remaining cinnamon mixture.
- Bake for 1 hour and 15 mins or till cake pulls away from sides of pan. Cool completely on wire rack, and cut using serrated knife.
- You can make this in a 9" square cake pan or a 9" springform pan;just reduce baking time by 5 mins.
