Holiday Raspberry Bars

- 1 c. all purpose flour shopping list
- 1 tsp. baking powder shopping list
- 1/2 c. butter or margarine shopping list
- 2 eggs shopping list
- 1 Tbls. milk shopping list
- 1/2 c. raspberry jam shopping list
- 4 Tbls. melted butter or margarine shopping list
- 2/3 c. sugar shopping list
- 2 c. flaked coconut shopping list
- 1 tsp. vanilla shopping list
How to make it
- Measure flour and baking powder into bowl. Add butter, and use a hand mixer to blend butter into flour until well mixed. Stir in 1 egg and the milk. Mix until a soft dough is formed. Spread into an ungreased 8" or 9" square pan, pressing with fingers to cover bottom with an even layer of dough. Spread raspberry jam over dough evenly. Stir together the remaining egg, butter, sugar, coconut and vanilla. Spread on top of the jam. Bake at 350 degrees for 30 minutes or until top is lightly browned. Cool, cut into squares.
