Crustless Spinach Quiche

- 1 Tablespoon vegetable oil or canola oil shopping list
- 1 onion, sliced shopping list
- 1 (10 ounce) package frozen chopped spinach, thawed and drained shopping list
- 5 eggs beaten shopping list
- 3 cups cheese (your choice) shopping list
- 1/4 teaspoon salt shopping list
- 1/8 teaspoon ground black pepper shopping list
- Pinch of nutmeg shopping list
How to make it
- 1. Preheat oven to 350 degrees f (175 degrees c).
- 2. Lightly grease a 9 inch pie pan or quiche dish.
- 3. Add oil to skillet over medium-high heat.
- 4. Add the sliced onions and cook, stirring occasionally, until onions are soft.
- 5. Stir in spinach and continue cooking until excess moisture has evaporated.
- 6. In a bowl, combine eggs, cheese, salt, pepper and nutmeg.
- 7. Add spinach mixture and stir to blend.
- 8. Scoop into prepared dish.
- 9. Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.
