How to make it

  • Preheat oven to 350 F. Prepare a 9"x13" cake pan by spraying or grease and flour it. I prefer spraying since this cake is not frosted. I don't like any stray bits of flour to discolor the finished product.
  • Combine cake mix, jello, eggs, and water. Beat on low speed, scraping frequently, until well blended. Increase speed to high and beat for 2 minutes, scraping occasionally. Add oil and beat 1 minute longer.
  • Pour into prepared pan and bake for 30 minutes.
  • Remove pan from oven and place on trivet or thick pot holder. Poke holes all over top of cake with a fork. Don't place holes too close together because the top will sometimes break off once the cake is glazed - I speak from experience. : -)
  • Mix sugar and lemon juice. Pour over cake top and spread to edges. (I try to put extra glaze over the holes so it has an evenly glazed finish when done, but that isn't important and doesn't affect the taste.)
  • Return cake to oven to glaze. Keep an eye on it at this point. The time varies depending on the humidity. I've had it take as little as 3 minutes and as long as 7 minutes.

    Thanks for the comments on the jello cake. I've seen the poke cakes, but I've never seen another one like this. It makes such a moist and delicious cake. I hope you're doing well. I've got some free time (at least until my next project gets uploaded to the FTP - I work from home).
