Spaghetti Squash Supper

- 1 spaghetti squash, cooked, halved and seeded shopping list
- 1 lb. ground beef or turkey shopping list
- 1 lb. ground sausage or turkey sausage (we prefer Italian sausage) shopping list
- 1 large green bell pepper, chopped shopping list
- 1/2 red bell pepper, chopped shopping list
- 1 large onion, chopped shopping list
- 2 cloves garlic, minced shopping list
- 2 cans (14 1/2 oz.) Italian-style diced tomatoes, drained shopping list
- 1 1/2 tsp. leaf oregano shopping list
- 2 tsp. leaf basil shopping list
- freshly ground black pepper to taste shopping list
- 4 1/2 c. shredded cheese (we use colby-jack), divided shopping list
How to make it
- Preheat oven to 350 F.
- In a large skillet, over medium heat brown ground beef (or turkey) and sausage with peppers, onion, and garlic until the vegetables are tender and the meat is no longer pink..
- Mix in the squash, tomatoes, oregano, basil and the freshly ground black pepper. You may adjust seasoning to taste. I've sometimes added marjoram. too.
- Remove from heat and stir in about 4 c. of the cheese. Stir until cheese is melted.
- Pour into lightly greased oven-safe dish. (I usually use a large enough skillet and just put the skillet in the oven.)
- Cover and place in preheated oven to bake for 25 minutes.
- Remove from oven, remove cover and sprinkle with remaining cheese.
- Return to the oven to back 5 minutes longer, or until cheese is melted.
- Serve with hot biscuits, if desired.
