Miso Soup With Soba Noodles

- 5 cups water shopping list
- 3 oz soba noodles shopping list
- 2 tbsp miso shopping list
- 4 oz spinach leaves shopping list
- 1 carrot, sliced thin shopping list
- 4 mushrooms, sliced shopping list
- 2 tsp low sodium soy sauce shopping list
- 3 green onions, sliced on diagonal (One onion for garnish) shopping list
- sesame seeds for garnish shopping list
How to make it
- In a stockpot, bring water to boil over medium-high heat. Remove 1 cup of water in a glass measuring cuo and stir in the miso until dissolved. Return to stockpot.
- Add soba noodles, reduce to low, cook for a few minutes, stirring a couple of times. Add spinach, carrot, mushrooms, soy sauce & 2 of the green onions, cook for a couple of minutes, until carrots are softened.
- Serve with sesame seeds and green onion sprinkled on top
