How to make it

  • In a stockpot, bring water to boil over medium-high heat. Remove 1 cup of water in a glass measuring cuo and stir in the miso until dissolved. Return to stockpot.
  • Add soba noodles, reduce to low, cook for a few minutes, stirring a couple of times. Add spinach, carrot, mushrooms, soy sauce & 2 of the green onions, cook for a couple of minutes, until carrots are softened.
  • Serve with sesame seeds and green onion sprinkled on top
