How to make it

  • 1. Preheat the oven to 400 F/200C.
  • 2. Grease a 12 cup muffin pan or use paper liners.
  • 3. Sift together the flour, baking powder and salt.
  • 4. Then stir in the sugar and dried apricots.
  • 5. Mash the bananas and put in a bowl. Make up the puree to 1 cup with milk.
  • 6. Lightly beat the eggs in a bowl and then add the banana and milk mixture and the oil.
  • 7. Add the wet ingredients to the dry ingredients and store gently until just combined.
  • 8. Spoon the batter into the prepared muffin pan and bake in the preheated oven for about 20 minutes, until well risen, golden brown and firm to the touch.
  • 9. Let the muffins cool for about 5 minutes and then transfer them to a wire rack to cool completely.
