Apricot & Banana Muffins

- 2 cups all purpose flour shopping list
- 1 tablespoon baking powder shopping list
- 1/8 teaspoon salt shopping list
- heaping 1/2 cup superfine sugar shopping list
- 1/3 cup plumped dried apricots, finely chopped shopping list
- 2 bananas shopping list
- about 2/3 cups of milk shopping list
- 2 large eggs shopping list
- 6 tablespoons of sunflower oil or melted cooled butter shopping list
How to make it
- 1. Preheat the oven to 400 F/200C.
- 2. Grease a 12 cup muffin pan or use paper liners.
- 3. Sift together the flour, baking powder and salt.
- 4. Then stir in the sugar and dried apricots.
- 5. Mash the bananas and put in a bowl. Make up the puree to 1 cup with milk.
- 6. Lightly beat the eggs in a bowl and then add the banana and milk mixture and the oil.
- 7. Add the wet ingredients to the dry ingredients and store gently until just combined.
- 8. Spoon the batter into the prepared muffin pan and bake in the preheated oven for about 20 minutes, until well risen, golden brown and firm to the touch.
- 9. Let the muffins cool for about 5 minutes and then transfer them to a wire rack to cool completely.
