How to make it

  • Pre heat oven to 190 °C / 375 °F / Gas 5. Coarsely mince the liver, bread and onion together into a basin; add the suet and sage and mix well.
  • Place the mixture in a shallow 18 cm (7 inch) square tin; level the top with the back of a spoon and cook in the centre of the oven for 40 minutes. Remove from the oven and cut into 9 squares.

    I just had liver and onions last night! I haven't tried it with sage though... very interesting. Our name for them isn't as colorful as the English!
