Chocolate Angel Cake

- 8-10 egg whites (to equal 1 cup) shopping list
- 1 1/4 cups sugar shopping list
- 1 cup cake flour - minus 4 TBS shopping list
- 1 tsp cream of tartar shopping list
- 1 TBS water shopping list
- 1/8 tsp salt shopping list
- 1/2 tsp orange flavoring shopping list
- 1/2 tsp vanilla shopping list
- 4 TBS cocoa shopping list
How to make it
- Sift flour and sugar separately 4 times. Measure each after first sifting. Whip egg whites lightly with wire whisk. Add salt, water, and flavorings whe half beaten. Sift in cream of tartar. Continue whipping until whites hold their shape. Divide sugar into fourths. Fold in each forth with 10 careful strokes of the spatula. Divide flour into fourths. Fold in each fourth with 10 careful strokes of the spatula. Pour into un-oiled tube pan. Bake in slow oven (325) 50 minutes.
