Strawberry Stuffed French Toast

- 1-8 oz. pkg cream cheese, softened shopping list
- 1-12 oz. jar of Strawberry Preserves (or your choice) shopping list
- 1 tsp Vanilla Extract shopping list
- 1/2 cup Walnuts or Pecans, chopped shopping list
- 1-16 oz loaf French bread shopping list
- 4 Eggs shopping list
- 1 cup Heavy Whipping Cream shopping list
- 1/2 tsp ground Nutmeg shopping list
- 1/2 tsp Vanilla Extract shopping list
- 1/2 cup Orange Juice shopping list
- Fresh raspberries (optional) shopping list
How to make it
- In a small mixing bowl, beat together cream cheese, 2 tbsp of preserves, 1 tsp of vanilla until fluffy.
- Stir in nuts, set aside.
- Cut bread into 10 to 12, 1-1/2" thick slices; slice a pocket in top of each one, (not center, but top where crust is.)
- Fill each pocket with about 1-1/2 tbsp of cheese mixture.
- Beat together eggs, whipping cream, nutmeg and 1/2 tsp of vanilla.
- Using tongs, dip filled bread slices into egg mixture, be careful not to squeeze out filling.
- Cook lightly on greased griddle over medium heat about 2 minutes on each side, until golden brown. Keep warm in 300 degree oven while cooking remaining slices.
- Meanwhile, in small saucepan heat together the remaining preserves and orange juice.
- To serve, drizzle the preserve mixture over hot French Toast. If desired, top with raspberries.
