Cheese & Chive Muffins

- 2 cups of all purpose flour shopping list
- 1 tablespoon baking powder shopping list
- 1/8 teaspoon salt shopping list
- freshly ground pepper shopping list
- 1 1/3 cups coarsely grated sharp cheddar cheese shopping list
- 4 tablespoons snipped fresh chives, dried is ok use 2 tablespoons of dried shopping list
- 2 large eggs shopping list
- 1 cup milk shopping list
- 6 tablespoons melted and cooled butter shopping list
How to make it
- 1. Preheat the oven to 400F/200 c.
- 2. Grease a muffin pan or use paper liners/
- 3. Sift together the flour, baking powder, salt and pepper to taste in a bowl.
- 4. Stir in the cheddar cheese and the chives.
- 5. In another bowl lightly beat the eggs and then add the milk and oil.
- 6. Pour the wet ingredients into the dry and stir gently until just combined, do not overmix.
- 7. Spoon the batter into the muffins cups.
- 8. Bake in the preheated oven for about 20 minutes, until well risen and golden brown and firm to the touch.
- 9. Remove and let the muffins sit in the pan for about 5 minutes and then remove them and allow to cool completely.
