How to make it

  • 1. Preheat the oven to 400F/200 c.
  • 2. Grease a muffin pan or use paper liners/
  • 3. Sift together the flour, baking powder, salt and pepper to taste in a bowl.
  • 4. Stir in the cheddar cheese and the chives.
  • 5. In another bowl lightly beat the eggs and then add the milk and oil.
  • 6. Pour the wet ingredients into the dry and stir gently until just combined, do not overmix.
  • 7. Spoon the batter into the muffins cups.
  • 8. Bake in the preheated oven for about 20 minutes, until well risen and golden brown and firm to the touch.
  • 9. Remove and let the muffins sit in the pan for about 5 minutes and then remove them and allow to cool completely.
