Cuban Chicken

- 1/2 cup diced fresh pineapple (use canned tidbits to save time) shopping list
- 2 tablespoons rice vinegar shopping list
- 1 tablespoon orange marmalade shopping list
- 1/8 tsp cayenne pepper shopping list
- 1 (15-ounce) can black beans, rinsed and drained shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon paprika shopping list
- 1 tsp olive oil shopping list
- 4 (6-ounce) skinless, boneless chicken breast halves shopping list
- 1/4 cup chopped fresh cilantro shopping list
How to make it
- Combine the first 5 ingredients in a medium saucepan. Bring to a simmer over medium heat; cook 1 minute or until thoroughly heated. Keep warm.
- Combine the salt and paprika and sprinkle evenly over chicken. Quickly brown the chicken in olive oil. Pour black bean mixture over chicken; simmer 10-15 minutes or until chicken is cooked through.
- Sprinkle with cilantro and serve with rice, orzo, or couscous.
