New Potato & Blue Cheese Pie

- 6 red potatoes (about 2 lbs), unpeeled, sliced shopping list
- 1/2 cup blue cheese, crumbled shopping list
- 1/2 cup low sodium chicken broth (homemade even better or vegetable broth) shopping list
- salt & pepper to taste shopping list
How to make it
- Preheat oven to 350 degrees. In a 10 inch deep dish pie plate, coat lightly with cooking spray. Arrange half of the potato slices. Season with salt & pepper. Sprinkle cheese over potatoes. Add the rest of the potato slices, season. Pour stock around the edge.
- Cover tightly with foil, and bake until potatoes are tender, about 35 minutes. Remove and bake for about another 10 minutes, until browned.
